Ingredients
 
 

  • 50 g noodles
  • 30 ml olive oil
  • 1/2 lemon zest and juice
  • 1 tbsp light mayonnaise
  • 100 g sugar snap peas halved
  • 1 red pepper thinly sliced
  • 2 chicken breasts cooked

Instructions
 

  • Cook the noodles according to packet instructions.
  • Make the dressing by whisking together the olive oil, lemon zest and juice and mayonnaise.
  • Drain the noodles and place in a bowl.
  • Place the peas, red pepper, chicken and dressing in the bowl, mix and serve.
