
Warm Chicken Noodle Salad
A light and refreshing noodle salad with chicken and crisp vegetables, perfect for a quick meal.
Equipment
- Chopping board
- Chopping knife
- Saucepan
- Whisk
- 2 Mixing bowls
- Wooden spoon
- Stove
Ingredients
- 50 g noodles
- 30 ml olive oil
- 1/2 lemon zest and juice
- 1 tbsp light mayonnaise
- 100 g sugar snap peas halved
- 1 red pepper thinly sliced
- 2 chicken breasts cooked
Instructions
- Cook the noodles according to packet instructions.
- Make the dressing by whisking together the olive oil, lemon zest and juice and mayonnaise.
- Drain the noodles and place in a bowl.
- Place the peas, red pepper, chicken and dressing in the bowl, mix and serve.
