Ingredients
 
 

  • 400 g cooked rice cooled
  • 200 g tuna tinned in brine, drained and flaked
  • 100 g sugar snap peas halved
  • 1 red pepper diced
  • 2 tomatoes chopped into small chunks
  • 3 spring onions finely sliced
  • 2 tbsp light mayonnaise
  • 1/2 lemon (juice)
  • 10 ml olive oil

Instructions
 

  • Mix the rice, tuna, peas, peppers, tomatoes and spring onions in a bowl.
  • Stir through the mayonnaise, lemon juice and olive oil.
