
Roasted Veggie & Feta Medley
This colorful roasted vegetable and feta tray bake is a quick, healthy, and delicious meal or side dish. Packed with a variety of vegetables and creamy feta cheese, it’s seasoned with herbs and baked to perfection. Perfect for a weeknight dinner or meal prep, it’s both vegetarian and full of flavor.

Ingredients
- 2 cups mixed vegetables frozen, sliced (e.g., carrot, zucchini, broccoli, bell pepper)
- 200 g feta cheese
- 2 tbsp olive oil
- 1 tsp dried herbs (e.g., oregano, thyme)
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 200°C (390°F).
- Line a baking tray with parchment paper.
- Spread the mixed vegetables evenly on the tray.
- Cut the feta into cubes.
- Add the feta cubes on top.
- Drizzle with olive oil and sprinkle with herbs, salt, and pepper.
- Toss gently to coat everything evenly.
- Bake for 20–25 minutes until vegetables are tender and slightly golden.
