Ingredients
  

  • 10 ml vegetable oil
  • 1 large onion
  • 100 g baby corn
  • 1 medium-sized red pepper
  • 1 medium-sized yellow pepper
  • 2 medium-sized carrots
  • 150 g cauliflower
  • 225 g long grain rice
  • 1 tsp cumin powder
  • 1 tsp curry powder mild
  • 1 tsp tomato puree
  • 1 vegetable stock cube low-salt, dissolved in 600 ml of boiling water
  • 600 ml water bring to boil to dissolve stock cube

Instructions
 

  • Chop the vegetables.
  • Heat the oil in a saucepan and add the onions for 1 minute. Add the remaining vegetables and cook until softened.
  • Add the rice and stir in the cumin powder, curry powder, tomato puree and stock. Bring to the boil.
  • Reduce the heat, cover the pan and simmer for 15 to 20 minutes, until the rice is tender and the liquid absorbed.
