
Rice and Vegetable Hotpot
A hearty and easy-to-make one-pot rice dish with a medley of vegetables and fragrant spices.
Equipment
- Chopping board
- Chopping knife
- Measuring cup
- Saucepan
- Wooden spoon
- Vegetable peeler
Ingredients
- 10 ml vegetable oil
- 1 large onion
- 100 g baby corn
- 1 medium-sized red pepper
- 1 medium-sized yellow pepper
- 2 medium-sized carrots
- 150 g cauliflower
- 225 g long grain rice
- 1 tsp cumin powder
- 1 tsp curry powder mild
- 1 tsp tomato puree
- 1 vegetable stock cube low-salt, dissolved in 600 ml of boiling water
- 600 ml water bring to boil to dissolve stock cube
Instructions
- Chop the vegetables.
- Heat the oil in a saucepan and add the onions for 1 minute. Add the remaining vegetables and cook until softened.
- Add the rice and stir in the cumin powder, curry powder, tomato puree and stock. Bring to the boil.
- Reduce the heat, cover the pan and simmer for 15 to 20 minutes, until the rice is tender and the liquid absorbed.
