Ingredients
  

  • 1 tsp vegetable oil
  • 1 loin pork chop lean, cut into strips
  • 1 small onion peeled and chopped
  • 1 clove garlic peeled and crushed or finely chopped
  • 0.5 tsp paprika
  • 0.5 tsp rosemary dried
  • 0.5 tsp thyme dried
  • 1 bay leaf
  • 1 tbsp chickpeas drained
  • 0.5 sweet potato medium-sized, peeled and cubed
  • 400 g tin chopped tomatoes

Instructions
 

  • Heat the oil in a non-stick pan and when hot, brown the pork. Remove the pork from the pan and set aside.
  • Next add the onion and all the herbs and spices and cook for 5 minutes before stirring in the remainder of the ingredients, including the pork.
  • Cover the stew, turn the heat down to its lowest and simmer until tender (1 hour).

Notes

Serve hot with crusty bread or steamed rice for a complete meal.
