
Pork, Chickpea, and Sweet Potato Stew
A hearty and nutritious stew combining tender pork, chickpeas, and sweet potato.
Equipment
- Chopping board
- Chopping knife
- Saucepan
- Wooden spoon
- Stove
Ingredients
- 1 tsp vegetable oil
- 1 loin pork chop lean, cut into strips
- 1 small onion peeled and chopped
- 1 clove garlic peeled and crushed or finely chopped
- 0.5 tsp paprika
- 0.5 tsp rosemary dried
- 0.5 tsp thyme dried
- 1 bay leaf
- 1 tbsp chickpeas drained
- 0.5 sweet potato medium-sized, peeled and cubed
- 400 g tin chopped tomatoes
Instructions
- Heat the oil in a non-stick pan and when hot, brown the pork. Remove the pork from the pan and set aside.
- Next add the onion and all the herbs and spices and cook for 5 minutes before stirring in the remainder of the ingredients, including the pork.
- Cover the stew, turn the heat down to its lowest and simmer until tender (1 hour).
Notes
Serve hot with crusty bread or steamed rice for a complete meal.
