Ingredients
 
 

  • 1 tsp vegetable oil
  • 10 mushrooms chopped
  • 1 onion finely chopped
  • 575 ml water bring to boil
  • 1 stock cube low-salt, dissolved in 575 ml of boiling water
  • 425 ml milk low-fat
  • pinch of salt optional
  • pepper

Instructions
 

  • Heat the oil in a saucepan. Add the mushrooms and onion and fry, stirring continually for 5 minutes.
  • Gradually stir in the stock and milk and bring to the boil. Keep stirring.
  • Simmer for 20 minutes.
  • Add salt (if using) and pepper to taste.

Notes

Try adding corn to the soup for extra texture and taste.
