
Mexican Burritos
This Mexican Burrito is a flavorful and satisfying dish made with wheat tortillas filled with marinated chicken (or tofu), creamy black bean purée, sweet corn, guacamole, melted cheese, and fresh coriander. Equipment
- 2 Frying pan
- 1 Masher
Ingredients
- 2 Wheat tortillas
- 100 g Chicken strips alternatively with tofu
- 1 tin Black beans
- 50 g Sweet corn
- 10 tbsp Guacamole
- 50 g Emmental cheese or Gouda
- A bunch chopped coriander
- 50 g Sour cream
- 1 tsp Olive oil
- 2 tbsp Soy souce
- Pinch of salt
- Pinch of pepper
Instructions
- Marinate the chicken in soy sauce, salt and pepper for around 10 minutes.
- Heat olive oil in the pan, then add black beans from the tin with some water. When the beans start to boil mash or puree them with a hand blander or a masher.
- In the meantime start frying the marinated chicken strips in a second pan until they turn brown.
- In a bigger pan start heating one wheat tortilla. Flip it on the other side before it burns and spread some beans puree on it.
- Add the other ingredients (chicken, corn, guacamole, cheese, chopped coriander).
- When the cheese is melted add some sour cream on the top and fold the burrito.
Notes
Deppending on your preferences you can use tofu instead of chicken, chickpeas or peas instead of corn and parsil instead of coriander.

This recipe is so delicous with the bean puree and chicken.
You can easily combine it with whatever you have in the fridge. For example I used sour cream instead of guacamole and added jalapenos. You need to plan a little bit ahead when you cook it because it involves multiple pans. I prepared the beans in a pot because I only have one pan. That worked well too.
