
Mediterranean Feta Couscous Courgette
Simple, tasty, and healthy — this Mediterranean-inspired recipe has it all. Choose between courgettes (zucchini) or eggplant as your main vegetable. Combined with feta cheese, chopped tomatoes, and Italian herbs, the result is a creamy, flavorful dish that's easy to make and satisfying to eat.

Ingredients
- 1 cups couscous
- 1 cups water
- 1 tbsp stock powder
- 2 courgettes or eggplants
- 2 x 400g tins chopped tomatoes
- 400 g feta
- 2 tbsp vegetable oil
- pinch of salt
- pinch of pepper
- Italien herbs
Instructions
- Bring the water to a boil and add some stock powder.
- Add the couscous, cover and let sit for 5–10 minutes until the liquid is absorbed.
- In the meantime cut the courgettes and feta into small pieces.
- Heat the vegetable oil in a large deep frying pan or saucepan over medium heat. Add the chopped zucchini or eggplant.
- Sauté for 8–10 minutes, stirring occasionally, until soft and lightly browned.
- Pour in the chopped tomatoes, season with salt, pepper, and Italian herbs and let everything simmer for 10 minutes.
- Stir in the feta stir gently until just combined and creamy.
- Spoon couscous onto plates or into bowls and top with the warm vegetable-tomato-feta mixture.
