Ingredients
  

  • 1 cups couscous
  • 1 cups water
  • 1 tbsp stock powder
  • 2 courgettes or eggplants
  • 2 x 400g tins chopped tomatoes
  • 400 g feta
  • 2 tbsp vegetable oil
  • pinch of salt
  • pinch of pepper
  • Italien herbs

Instructions
 

  • Bring the water to a boil and add some stock powder.
  • Add the couscous, cover and let sit for 5–10 minutes until the liquid is absorbed.
  • In the meantime cut the courgettes and feta into small pieces.
  • Heat the vegetable oil in a large deep frying pan or saucepan over medium heat. Add the chopped zucchini or eggplant.
  • Sauté for 8–10 minutes, stirring occasionally, until soft and lightly browned.
  • Pour in the chopped tomatoes, season with salt, pepper, and Italian herbs and let everything simmer for 10 minutes.
  • Stir in the feta stir gently until just combined and creamy.
  • Spoon couscous onto plates or into bowls and top with the warm vegetable-tomato-feta mixture.
