
Feta Beetroot Wrap
Fast to prepare and healthy choice for lunch or dinner. Good for meal prepping too.
Equipment
- 1 Chopping board
- 1 Chopping knife
- 1 Bowl
Ingredients
- 4 wraps medium-size
- 200 g beetroot from a tin or fresh (wash if needed)
- 200 g mixed salad or coleslaw
- 240 g feta cheese
- 200 g natural yogurt
- 1 onion small
- 1 tsp chives
- pinch of pepper
- pinch of salt
- 1-2 squeezes of lemon juice
Instructions
- Chop the onion into small pieces.
- In a bowl mix the yogurt, onion, chives, pepper, salt and lemon juice to prepare a dressing.
- Cut the feta cheese and beetroot into pieces.
- Wash the salad if needed.
- Fill a wrap with some lettuce, feta, beetroot and dressing.
Notes
This tastes well with other dressing such as honey mustard too.
