
Chargrilled Chicken Kebabs
Delicious and healthy chargrilled chicken kebabs with vibrant vegetables.
Equipment
- Chopping board
- Chopping knife
- Mixing bowls 2 needed
- Wooden spoon
- 12 Wooden skewers Soak in water
- Vegetable peeler
Ingredients
- 400 g chicken cut into large pieces
- 1 chili optional chopped finely, fresh
- 1 lemon zest
- 2 sprigs rosemary fresh, finely chopped
- 20 ml olive oil
- 1 pepper cut into large pieces
- 1 courgette peeled into ribbons
- 180 g mushrooms halved
- 2 onions cut into thin wedges
- 200 g tomatoes
Instructions
- Soak 12 wooden skewers in water.
- Place the chicken into a bowl, along with half of the chili, lemon, rosemary, and olive oil.
- Mix the chicken with the marinade and cover.
- Place all the vegetables into a large bowl, along with the rest of the chili, lemon, rosemary, and olive oil. Mix and cover.
- Place both bowls in the fridge to marinate.
- Preheat the oven to 200°C / 400°F / Gas Mark 6.
- Thread the ingredients onto the skewers and place on a tray.
- Cook for 25 minutes until the chicken is cooked through and all sides are golden.
Notes
Serve hot with a side salad or your favorite dipping sauce for a complete meal.
