
Meat Loaf
A versatile meat loaf that can be served hot or cold, perfect for family meals or sandwiches.
Equipment

- Chopping knife
- Frying pan
- Large loaf tin
- Mixing bowl
- Wooden spoon
- Stove
- Oven
Ingredients
- 450 g minced pork lean
- 1 large onion very finely chopped
- 6 apricots dried, chopped into small pieces
- salt to taste
- pepper to taste
- 2 green apples medium-sized, finely chopped
- 110 g brown breadcrumbs fresh
- 20 g tomato sauce
- 10 walnuts quartered
- 2 medium-sized eggs beaten
- 1 tsp vegetable oil to brush the loaf tin
Instructions
- Fry the minced pork and onion in a dry pan, then add in the apricots for a few minutes on a low heat, then season with salt and pepper. The sausage meat contains fat, so there is no need to add extra oil to the pan.
- When the meat is cooked, place all the ingredients in a large mixing bowl and mix thoroughly together.
- Brush a large loaf tin with oil and fill with the mixture.
- Smooth the top and place in the fridge for 1 hour.
- Preheat the oven to 180°C / 350°F / Gas Mark 4.
- Cook in the preheated oven for around 1¼ to 1½ hours.
Notes
Serve hot with vegetables or cold with a salad or as a sandwich filling.
