Ingredients
 
 

  • 450 g minced pork lean
  • 1 large onion very finely chopped
  • 6 apricots dried, chopped into small pieces
  • salt to taste
  • pepper to taste
  • 2 green apples medium-sized, finely chopped
  • 110 g brown breadcrumbs fresh
  • 20 g tomato sauce
  • 10 walnuts quartered
  • 2 medium-sized eggs beaten
  • 1 tsp vegetable oil to brush the loaf tin

Instructions
 

  • Fry the minced pork and onion in a dry pan, then add in the apricots for a few minutes on a low heat, then season with salt and pepper. The sausage meat contains fat, so there is no need to add extra oil to the pan.
  • When the meat is cooked, place all the ingredients in a large mixing bowl and mix thoroughly together.
  • Brush a large loaf tin with oil and fill with the mixture.
  • Smooth the top and place in the fridge for 1 hour.
  • Preheat the oven to 180°C / 350°F / Gas Mark 4.
  • Cook in the preheated oven for around 1¼ to 1½ hours.

Notes

Serve hot with vegetables or cold with a salad or as a sandwich filling.
