
Lentil Soup
Hearty and nutritious lentil soup, perfect for a cozy family meal.
Equipment
- Saucepan
- Wooden spoon
- Chopping board
- Chopping knife
- Measuring cup
- Vegetable peeler
- Hand blender optional
- Stove
Ingredients
- 2 onions small
- 2 large carrots
- 1/2 tsp mixed dried herbs
- pinch ground ginger
- 225 g red lentils
- 2 low-salt stock cubes dissolve in 1150 ml of boiling water
- 1150 ml water bring to boil
Instructions
- Peel and chop the onions.2 onions
- Wash, peel and chop the carrots.2 onions
- Place the onions in a saucepan with a little water and cook gently for about 5 minutes or until soft.2 onions
- Add the chopped carrots.2 onions
- Add the mixed herbs and a pinch of ground ginger.2 onions
- Remove from the heat and stir in the lentils, mixing well.2 onions
- Return to the heat, add the vegetable stock and simmer for 25 to 30 minutes.2 onions
- Once cooked, liquidise the mixture with a hand blender or liquidiser.
- Return the blended soup to the saucepan and reheat without boiling.
- Serve and enjoy.
Notes
Serve hot with crusty bread for a filling meal.
