Ingredients
  

  • 200 g penne pasta
  • 1 tbsp olive oil
  • 1 salmon fillet skin removed
  • 200 g frozen spinach thawed
  • 1 clove garlic minced
  • Salt to taste

Instructions
 

  • Cook the penne pasta according to package instructions, then drain.

In the meantime:

  • Heat olive oil in a pan and cook salmon for 3-4 minutes per side until browned and cooked through. Remove and set aside.
  • In the same pan sauté garlic for 1 minute.
  • Add the spinach and cook until heated. Simmer for 2-3 minutes.
  • Return salmon to the pan, breaking it slightly into chunks if desired, and mix gently with sauce.

Serve:

  • Serve the sauce and salmon over the cooked penne.
