
Creamy Spinach Salmon Penne

Ingredients
- 200 g penne pasta
- 1 tbsp olive oil
- 1 salmon fillet skin removed
- 200 g frozen spinach thawed
- 1 clove garlic minced
- Salt to taste
- Black pepper to taste
Instructions
- Cook the penne pasta according to package instructions, then drain.
In the meantime:
- Heat olive oil in a pan and cook salmon for 3-4 minutes per side until browned and cooked through. Remove and set aside.
- In the same pan sauté garlic for 1 minute.
- Add the spinach and cook until heated. Simmer for 2-3 minutes.
- Return salmon to the pan, breaking it slightly into chunks if desired, and mix gently with sauce.
Serve:
- Serve the sauce and salmon over the cooked penne.
